Recipe Corner: Fried Salmon 

-1 can of salmon 

-1 or 2 eggs 

-saltine crackers 

-vegetable or canola oil for frying salmon 

Open and drain the salmon.  Remove bones and skin from the salmon.  Add the egg and crumbled crackers.  Mix and form into patties.  Fry the salmon patties in the oil until you notice the edges browning.  Then flip the patties and fry the other side.  Remove from heat onto a plate and enjoy. 

Note: It has been reported that the addition of sauerkraut juice to the mixture makes the patties even better.
